I've seen that bike in your link. Some nice work on it, but not a style I'd subscribe to... particularly the taillight - great for when you pulled over by a cop, just genius. Mikunis can be dialed in but it's a process of trial and error. As for cutting sidecovers... I suppose gently on a bandsaw would work, but you'd have to be careful.
