Bike looks good, I would have something that covers at least from the swing arm to the to the back of the seat. There is a practical side to fenders.

Buy a cheap 350 fender on ebay that has the rear end bent up. Bob it to suit your aesthetics. All you'll have to work out is the front mount.

or go rummage at your local bike junk yard for a rusty old fender and cut it up.

MOST bike rear fenders (regardless of brand) are curved appropriately for a 26" to 27" diameter wheel/tire combination.......
Pick one you like the "looks" of, and fabricate mounting straps.....

My first thought was an early CB750K or similar front fender would allow plenty of real estate to customize any way you want, will be wide enough, and will cover from swingarm up and back far enough to ride in the rain if needed.
