Anything I should be wary of while doing it?

I'm a tall guy and likely lowering the seat a bit when I reshape it. I'm not quite sure how high I can go, but it'd be awesome to not have my knees at my chin! I saw suggestions for Hagon USA and Progressive Suspension for vendors, any preferences?

You're changing the balance of the bike, shifting weight transfer forwards. At the same time you're decreasing the rake/trail of the front steering. A little is ok but too much will upset the handling. I'd say no more that 1/2-3/4" rise in the rear.
Progressive and Hagon are both good.

Raising the shocks will not get your knees off your chin but lowering the foot pegs will.
The relationship between the seat and the pegs is what needs to change.
