The last 500T (1976) did switch to 7mm top clamp pinch bolts, don't know why.
The top clamps for all CB450 disk brake models are the same part, as far as I know.
The 500T clamp is slightly different - all the spacings are the same, but the 500T clamp has a different instrument//indicator mount setup.
Stainless 7mm bolts are available lots of places. Chrome, maybe not so common......
I have a 76 500t triple clamp, has 7mm, and a 75 which has 8 mm bolts, just like you say.
Can't figure out why though. There are tons of late 70's and early 80s hondas with 7mm pinch bolts. 7mm is kind of an odd size.
