I've heard that the cb360 has a cam that runs directly on the aluminum of the head. Does the 350 have replaceable bearings on the head that the cam runs on?

The STOCK Motor Parts do not have replaceable Cam Bearings.
Both the 350 & the 360 are the same design concept, but slightly different IE: Not interchangeable.

On both Motors the Cam Bearings are separate parts (End Caps) that fit into the side of the Upper Rocker Case.
While you can replace the entire End Cap there is not a replaceable bearing.

There are some who have done extensive machine shop surgery on the end caps to create a replaceable bearing.
To do so requires access to a machine shop and the skills to operate the tools.

360s do NOT have replaceable/ separate cam bearings. The entire head has to be changed in order to replace damage to a journal.

Correction:
The 360 does not have the removable End Caps that support the Cam the way the 350 does.

The 360 Cam run directly in the Head with a Half Moon cradle for the Cam Bearing and the other Half in the top rocker cover.
